How about a Norwegian Salmon Dish that ties in perfectly. This recipe brings the fresh, vibrant flavours of the coast to your kitchen and is a great way to celebrate Nordic cuisine as featured in the book.

Recipe: Norwegian Oven-Baked Salmon with Dill and Mustard Sauce
Ingredients:
- 4 salmon fillets
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 tablespoon fresh dill, chopped (plus extra for garnish)
- 1 tablespoon mustard (Dijon or whole grain)
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 2 tablespoons Greek yogurt
- 1 tablespoon capers (optional)
Method:
- Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.
- Prepare the salmon: Place the salmon fillets on the prepared tray. Drizzle with olive oil and season with salt, pepper, and chopped dill.
- Make the sauce: In a small bowl, whisk together mustard, honey, lemon juice, Greek yogurt, and a little more dill until smooth. If you like, stir in capers for extra flavour.
- Bake the salmon: Bake the fillets in the oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve: Spoon the dill and mustard sauce over the salmon fillets and garnish with extra fresh dill.
- Serving Suggestions: Serve this dish with roasted potatoes, steamed vegetables, or a fresh green salad to enjoy a delicious Norwegian-inspired meal.

I’ve always wanted to visit the Basque Country and do a pintxo crawl round San Sebastian’s Old Town, pintxo being the Basque region’s version of Spain’s tapas, but served on sticks. I’d like to sample as many of the ones I like the look of, but probably mostly fishy ones, along with at least one glass of wine in each bar visited. The Old Town is supposed to have Neoclassical architecture and a great atmosphere so I hope I’d be in a fit state to appreciate it.

San Sebastián and its surrounding area. Every meal we had there was fantastic and we didn’t visit any of the many Michelin Starred restaurants. Would so love to go back there again.
First stop would be Belgium. The best chips, waffles and chocolates washed down with a delicious Trappist beer !
The Norwegian salmon recipe is the one for me. We were in Norway last year and in Bodo the hotel had trays of salmon steaks laid out – for breakfast!

I feel that Germany and Italy would be very interesting with the variety of Food and also the types of scenery and buildings that are there. I have seen some programmes on TV showing such wonderful buildings and feel that to visit some of these and enjoy the experience of culture in these countries would be an amazing experience.
