We stayed one night in the Aoraki Mount Cook Alpine Lodge. It was really comfortable and the shared kitchen and lounge area were immaculate. We could do all of our walks straight from the lodge and would specially recommend the Hooker Valley Trail over 3 suspension bridges and ending up at the frozen lake at the foot of the glacier and Mount Cook.
