  1. We love our new pizza oven and have had great fun cooking and dining al fresco this summer, my favourite is a sourdough base with prosciutto, walnuts and pear with rocket and balsamic dressing added after cooking.

  2. I just love ratatouille. I make it from scratch because I have a glut of all the veg and herbs needed for it after summer growing in the garden (tomatoes, onions, peppers, zucchini , basil, oregano, garlic and chilli. I make it in bulk, freeze it and have it ready to use when needed as a side or simply on top of pasta with a sprinkling of parmesan. It reminds me of holidays in Italy.

  3. Moussaka as my family love it served with a greek salad and some olive bread. Takes us right back to our Greek holidays.

  4. Risotto – I love how you can change it up by adding different ingredients and it’s so tasty and satisfying

  5. My wife and I love Spanakopita, and she would love to know how to cook it! It reminds her of Greek holidays many moons ago…

  6. My favourite dish to cook is cassoulet. It is utterly unctious and immensely satisfying. A truly hearty repast, full of rich goodness and definitely not for the fainthearted.

  7. Any pasta dish for me – they are so versatile and so many variations possible. However the grandsons would demand Pizza!

  8. I like tapas dishes, especially large prawns in garlic and chillies, large flat mushrooms with garlic butter.

  9. Falafal in Pitta bread with lettuce topped with Greek yogurt. Easy to make with a tin of chick peas.
    If time is tight the frozen falafal are equally tasty.
    Whenever I eat them they remind me of my first trip to Israel when I was a teenager and we used to buy them from street side stalls.

  10. Love to do a minestrone because I can just raid my freezer and store cupboard and have a beautiful meal x

  12. My favourite Mediterranean recipe is Greek-style stuffed peppers (Gemista). There’s something magical about the way the sweet peppers roast and soften, cradling a savoury mix of rice, herbs, and minced lamb. I love how each bite bursts with oregano, cinnamon, and a hint of lemon—like sunshine on a plate. It’s a dish that reminds me of holidays in Crete, where every meal felt like a celebration. Cooking it brings those memories home, and sharing it with family makes it even more special.

  13. A traditional Italian Spaghetti Bolognese, smothered in grated Parmesan Cheese, all swilled down with a bottle of Scicilian Red.

  14. I love Paella … either a chicken and choritzo one or a vegetarian one with asparagus, green beans, red peppers and black olives …. delicious and so easy to make.

  15. I love to make bouillabaisse! It is delicious served with grated cheddar thickly sprinkled on top and sliced crusty bread to dip in. It transports me back to glorious holidays in my beloved France.

  16. The favourite Mediterranean recipe that I love to cook is Spanakopita Egg Muffins. Besides the wonderful combination of flavours…spinach, eggs, feta, and phyllo…you can make them ahead of time and refrigerate or freeze them until you need them!

  17. Generally tapas especially the one with pan tomato with a little piece of pepper, bacon and a quails egg

  18. I have got to say Paella. I love seafood and rice the flavours in this this dish are making my mouth water just writing this. Would love to win to try more exciting flavours

  19. Paella – It has such vibrant flavours and is an impressive and convenient dish for entertaining.

  20. A hearty minestrone with beans and pasta; not just a soup – more a meal in itself. Served with a generous amount of grated Parmesan and some crusty bread.

  21. A Greek Salad as I love Feta cheese – it takes no preparation at all, can be adapted and either sits on its own or goes so well with grilled fish or meat.
