I love Greek salads because everyone in my house is keen on them and my son is vegetarian
Lasagne – basic but delicious!
a greek salad but I love most mediterranean food especially anything with olives, tomatoes and garlic
My favourite recipe is Keftedes, greek cypriot pork meatballs.
Paella because it is so tasty and has a little of everything in it.

I love paella as it is by far my favourite dish, with plenty of seafood and peas.
We love our new pizza oven and have had great fun cooking and dining al fresco this summer, my favourite is a sourdough base with prosciutto, walnuts and pear with rocket and balsamic dressing added after cooking.
I like cooking pizzas for mixed leftovers; and I like Greek moussaka just for the indulgent taste of it
Our grandchildren love paella so it’s a lovely family time sharing with them.
I just love ratatouille. I make it from scratch because I have a glut of all the veg and herbs needed for it after summer growing in the garden (tomatoes, onions, peppers, zucchini , basil, oregano, garlic and chilli. I make it in bulk, freeze it and have it ready to use when needed as a side or simply on top of pasta with a sprinkling of parmesan. It reminds me of holidays in Italy.
Caprise salad
Greek salad is healthy and quick to prepare. It reminds of wonderful holidays in the Greek Islands
Moussaka as my family love it served with a greek salad and some olive bread. Takes us right back to our Greek holidays.

My favourite dish to cook is cassoulet. It is utterly unctious and immensely satisfying. A truly hearty repast, full of rich goodness and definitely not for the fainthearted.
Frittata, because you can so much to it – vegetables, cheese, meat, herbs & spices
Any pasta dish for me – they are so versatile and so many variations possible. However the grandsons would demand Pizza!
I like tapas dishes, especially large prawns in garlic and chillies, large flat mushrooms with garlic butter.
Falafal in Pitta bread with lettuce topped with Greek yogurt. Easy to make with a tin of chick peas.
If time is tight the frozen falafal are equally tasty.
Whenever I eat them they remind me of my first trip to Israel when I was a teenager and we used to buy them from street side stalls.
Love to do a minestrone because I can just raid my freezer and store cupboard and have a beautiful meal x

Bouillabaisse- seafood stew. Such a delicious and hearty meal that’s a pleasure to cook.
Lamb Souvlaki – great for barbecues and easy to prep
greek butter beans in tomato and onion sauce, discovered these and much better than baked beans
Chicken pesto pasta served with meat and fish. Healthy and the whole family love it
My favourite Mediterranean recipe is Greek-style stuffed peppers (Gemista). There’s something magical about the way the sweet peppers roast and soften, cradling a savoury mix of rice, herbs, and minced lamb. I love how each bite bursts with oregano, cinnamon, and a hint of lemon—like sunshine on a plate. It’s a dish that reminds me of holidays in Crete, where every meal felt like a celebration. Cooking it brings those memories home, and sharing it with family makes it even more special.
A traditional Italian Spaghetti Bolognese, smothered in grated Parmesan Cheese, all swilled down with a bottle of Scicilian Red.
Love the pastitsada Kerkyras, which I first tried from the Cookaway store.
I love Paella … either a chicken and choritzo one or a vegetarian one with asparagus, green beans, red peppers and black olives …. delicious and so easy to make.
Mushroom risotto, as we all love mushrooms and are all veggie.
I love to make bouillabaisse! It is delicious served with grated cheddar thickly sprinkled on top and sliced crusty bread to dip in. It transports me back to glorious holidays in my beloved France.

The favourite Mediterranean recipe that I love to cook is Spanakopita Egg Muffins. Besides the wonderful combination of flavours…spinach, eggs, feta, and phyllo…you can make them ahead of time and refrigerate or freeze them until you need them!
Mushroom risotto, it takes a while to make but well worth the effort
Generally tapas especially the one with pan tomato with a little piece of pepper, bacon and a quails egg
I have got to say Paella. I love seafood and rice the flavours in this this dish are making my mouth water just writing this. Would love to win to try more exciting flavours
